Here’s a  list of the most loved African snacks and treats that are an Absolute Must-try!

 

  1. Mandazi- These are one  of my favorites , and a favorite among many readers. If you are having a party, make these. They will fly off the the table .  Mini Beignets made with  with grated coconut, spiced with cardamon, nutmeg and fried to perfection. Light, fluffy and addictive!   1. Chin Chin- Christmas wouldn’t be the same without these  West African pastry.   –   Once I pop I can’t stop eating . Guess where I keep mine? In the trunk of my  car. Why? Cause  I  eat the whole thing.  No Kidding!!! My weakness!

Orange Honey Glazed Salmon

This Orange Honey Glazed Salmon with perfectly balanced sweet and savory flavor is an easy and delicious dish for the whole family! Healthy, flavor packed meal in under 30 minutes.

You know there is a reason why citrus often accompanies fish. For starters, the citric acid cuts through the fish oils to ensure that the lovely sea flavor is never overwhelming. Additionally, citrus is a pleasant contrast. The natural saltiness of the fish combined with the sweet citrusy taste creates a perfectly balanced bite every single  time. Just Love it!!!! Everything about the recipe just works and all the elements meld flawlessly.

I just had to push this Fish and citrus combo a few steps further. The glaze consists of orange,  and lemon juice and as if this duo is not delicious enough, honey is added for additional sweetness and for thickening purposes along with thyme and cumin. Yes, you can do without it. However , it delivers an extra kick.

The thyme is such a is a great  addition. Couple with the fact that I DIG it ,  I use it in most of my recipes.

It delivers such  a subtle aroma, comparable to mint  while paprika and cumin  kicks the glaze up a few notches.

For a delectable meal every time, don’t over overcook the fish and make sure the glaze is flavorful and thick

FYI, Perfectly cooked salmon is light and flaky. It has good mouth feel and isn’t at all dry or tough. As for the glaze, the goal is one that adheres well to the fish. Every inch should have a flavorful coating.

Serve this salmon with  whole grain couscous and steamed broccoli . They make such a delicious  and healthy pair.  Or just go just serve with rice , vegetables

 Notes

  1. Season chicken with additional herbs if desired(dried parsley, oregano or thyme)
  2. For an extra kick use cayenne pepper  or cajun season salt. Omit if kids are involved.
Citrus and Thyme glazed salmon

Ingredients
  • 2-3 Orange (about ¾ cup orange juice)
  • ½ lemon about (1 tablespoon juice)
  • 1 Tablespoons olive oil
  • 4 salmon fillets (about 6 ounce each)
  • Creole Seasoning or Salt and freshly ground black pepper
  • 1 teaspoon minced garlic
  • ¼ cup Small onion diced
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • 1 Tablespoon honey
  • 2 teaspoons fresh thyme
  • ½ teaspoon cayenne pepper (optional)
  • ¼ cup broth or more
  • 2 teaspoons corn starch
  • Salt and pepper to taste

Instructions
  1. Squeeze juice from lemon, and orange juice. Then set aside.
  2. Heat a large cast iron or non-stick pan with olive oil.
  3. Season salmon both sides with salt and pepper to taste
  4. Then add seasoned salmon – brown both sides – about 2 -3 minutes pre side.
  5. Remove salmon and transfer on a plate.
  6. Add garlic,onions, thyme,paprika, cumin, to the cast iron pan and sauté for about a minute, then add ¼ cup chicken broth and simmer for about 2 minutes
  7. Pour in citrus juice and honey.
  8. Whisk cornstarch and about 1-tablespoon water/broth with cornstarch.
  9. Stir cornstarch paste into pan, and then bring to a boil. Let it boil for about a minute stirring frequently. Adjust seasonings to taste with salt and pepper. You may add more liquid if needed.
  10. Return salmon to pan, spoon sauce over salmon. Let it cook for another minute.
  11. Then serve with steamed broccoli and/or couscous.

While I did plan to share this recipe a while back, it was only after I received a request via Instagram did I actually get in the kitchen with chicken wings and camera in hand. The person who made the request was looking for a chicken wing idea to prepare for her Super Bowl party.. but she wasn’t a fan of the typical “Buffalo Wings”. With that in mind, I decided to give her and her guests a true taste of the Caribbean by using a tamarind glaze with a slight kick, to finish off the wings.

Baked Crispy Chicken Wings

Baked Crispy Chicken Wings – Ridiculously Crispy   outside, tender and juicy on the inside, and Oh so flavorful – the best part? You  won’t feel bad  indulging  in them.

Are  you ready for crispy, baked and spicy  chicken wings ? I guessed right. Who wouldn’t be? It wasn’t long ago before chicken wings became part of my family lexicon- though these days , I can hardly ever imagine that there was a time that  I rarely  made these wings  at  home.

They are so easy to make and  you have the freedom to include whatever  spices to match your mood or guests.

So after years of buying chicken wings at pizza places, restaurant , I wanted to make my own chicken wings-  one that is crispy , nothing beats that crispy first bite!  Since I am always looking for ways to cut down on my calories intake , I like baking food and see which ones hold up to the test, without comprising taste and texture . These, certainly do!

After reading alton brown method of achieving crispy chicken wings ,I decided to incorporate some of his techniques ; letting the wings dry in the fridge  for about an hour, sometimes overnight. However, if am press for time  I just use a clean towel to dry it up.

Drying the chicken makes  a huge difference in making the wings crispy. After mixing the wings with spices- paprika, onions, garlic powder, chicken bouillon powder and dried thyme. I  drizzle them with  canola oil and bake  rotating the wings half way through baking . Before baking I line my baking pan with aluminum foil for easy clean up .

Ingredients
  • 3 pounds chicken wings
  • 1 Tablespoon thyme
  • 1 teaspoon salt
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon white pepper
  • ½ teaspoon cayenne pepper
  • 1 teaspoon bouillon powder (you may replace with salt)

Instructions
  1. Wash chicken wings and place them on a cookie sheet in a single layer , then let them sit in the fridge for a minimum of 3 hours or preferable overnight. Do not cover them, let the air dry them out.
  2. When ready to bake , preheat oven to 425°.
  3. Place the chicken in a large bowl, with all the spices , then drizzle with vegetable oil .
  4. Line a baking pan with foil; top with a wire rack. Arrange chicken wings out in a single layer . While the chicken wings are baking oil will slowly drip to the bottom of the baking pan.
  5. Bake wings until cooked through and skin is crispy, about 45-50 minutes-rotate wings half way through-roughly 20 minutes .
  6. Remove and serve with your favorite chicken wing sauce.
